Mussels & Prawn rice
Ingredients
½ kg “Saric” rice
1 kg Mussels (frozen are already cleaned)
12 Prawns
1 onion
2 cloves of garlic
4 tablespoons tomato sauce
Virgin olive oil
2 tablespoons chopped parsley
Water and salt
Preparation
In a cacerole put the clean mussels. Cover them with water and cook them in a low heat until open. Remove from heat, remove the mussels out of their shell and strain the soup (this is when they´re not frozen). In a frying pan gild the garlic cloves (sliced) and the chopped onion with the dive oil when them start to look cooked add the rice and stir with a wooden spoon. Add the tomato sauce and the mussels soup (previously strained), 2 cups of soup per cup of rice. Add salt, rice would be ready in 20-25 minutes. 10 min. before add the reserved mussels and clean-chopped prawns. Add the chopped parsley. Leave the rice to settle for 5 min.
