“Moros and Cristianos” Rice
Ingredients
450 gr. Beans
6 cups water
450 gr. “Saric” Rice
4 cloves of garlic
1 medium chopped chilli
3 tablespoons vegetal oil
1 tablespoons salt
1/2 teaspoons oregano
¼ teaspoons cumin
1 laurel leave
2 tablespoons olive oil
Preparation
Boil the beans in water till they get tender. In a cooking pot add 3 tablespoons of vegetal oil, with the rice and stir till the rice gets soaked with oil, this keeps the rice from sticking to each other. Add garlic, chilli, onion, cumin, oregano, salt, pepper and 2 ½ cups of bean soup and cook it for 15 or 20 minutes till the rice begins to dry. Cook this in a low heat, cover the cooking pot with a paper bag in order to seal the steam. If the grain is still hard you can go adding a few drops of bean drops until the rice is well cooked. When the rice is well cooked add 1 or 2 cups of beans (without the bean soup). The reason why you must add the beans at the end of the preparation is to avoid the beans ruin. Finally fry a clove of garlic in olive oil and add this to the rice(just in the top, to make it shiny).
